A new case study from KC Healthy Kids and Public Health Law Center outlines how incubator kitchens can help entrepreneurs grow their food-based businesses. Located at the Douglas County Fairgrounds, just off K-10 in Lawrence, Kansas, Culinary Commons is a county-owned community incubator kitchen that provides almost 700 square feet of commercial kitchen space and equipment at an affordable rate. The case study details significant policy changes that allowed users more opportunities to use the facility to launch their businesses and align the facility’s usage with fairgrounds policy.
